Echoes Restaurant’s gastronomical experience is as much about the smorgasbord of multicultural influences brought to its kitchen by a global staff as it is about showcasing nature’s local and regional bounty.
Perched on the absolute edge of the Blue Mountains escarpment, surrounded by uber chic décor with jaw-dropping views over the Jamison Valley, diners experience a cultural fusion in every bite from the contemporary Australian menu with Asian influences. With few exceptions, food and wine is sourced from within a 100 mile (160km) radius of the kitchen, distinguishable by the flavour of crisp Blue Mountains air and earthy tones of the Central West. Traditional Asian flavours of chilli, lemongrass, kimchi and black bean enhance those of Hunter Valley-sourced Angus beef, duck from the Hawkesbury and lamb from Northern NSW. Seafood is only ever sourced from Australia, while local and regional-grown vegetables, greens, chocolate, berries, mushrooms and herbs are routinely on the menu. A growing proportion of vegetables, fruit and herbs are even sourced from the 1000sqm edible garden at Echoes’ sister property, Parklands Country Gardens & Lodges [please embed link: www.parklands.com.au] at Blackheath. In fact, regional produce is crucial to modern dining, where diners are discerning and ethically conscious. This extends to beverages and the popular matched wines option featuring regional wines which complement food in a way that beverages from other areas cannot because winemakers and producers are often influenced by the same things – the weather, the culture, the soil and the land itself. The result is a smorgasbord of flavours that is a unique dining experience to our guests alone.
